A couple months ago, our kitchen team was in the process of creating a new plant-based meal that would satisfy our customer’s savvy palates as well as their healthy eating habits. This culinary endeavor became clearer when we saw the opportunity to create a dish that not only celebrated the culture of our Karen (pronounced kah-REN) employees, but that also raised awareness to the number of refugees from Southeast Asia in our community.
Guided by one our Karen employees, Saw Loo, and his good friend and food house specialist, Andrew (Drew) Ely, they created a curry dish inspired by Khow Suey, a curry noodle soup. For many years, this was the meal that Saw cooked for Drew and other Karen family members as they sat around the dinner table telling stories about their lives that kindled their friendship.
The result is our new Coconut Vegetable Curry Over Noodles Ready Meal! A delightfully light and flavorful plant-based dish made with toasted aromatics, warm spices, and tender vegetables in a rich coconut lime sauce, served over delicate rice noodles. At home, add a sliced hard-boiled egg or fried garlic!
