Our artisan bread is known throughout the Triangle for its authentic Old World style. Jon McDonald is one of our lead bakers. We asked him to write a story about life in the bakery for the co-op’s 2015 Annual Report.
Jon responded with a series of vignettes: his uncertain arrival as a baker; the window letting in the six am sunlight and “illuminating the ambient flour in the air like we were actors in a Terrance Mallick film”; a profile of the bakery’s longest tenured baker, Memo; Jon’s recent try-out for the USA Baking Team, which will compete in the “Bread Olympics” in Paris.
