
For the salad:
- 2 Cara Cara Navel Oranges
- 5 oz baby spring mix
- 6 oz blackberries
- ½ cup walnut or pecan halves (toasted)
Citrus Poppy Seed Vinaigrette
- ½ cup freshly squeezed Meyer Lemon Juice (can use regular lemon juice too- will be a little more tart. Or try freshly squeezed orange juice!)
- 2 tbsp apple cider vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- ¼ tsp freshly ground pepper
- ½ tsp salt
- 1 tsp poppy seeds
- 1/3 cup extra virgin olive oil
Directions:
- With a sharp knife, slice the skin off the oranges, cut into wedges then thick chunks.
- Divide the spring mix, blackberries, oranges, and toasted walnuts or pecans onto 4 plates.
- Combine vinaigrette ingredients in a small jar, cover and shake until well combined.
- Pour vinaigrette over salad and enjoy!
