These chewy bars will be one of your favorite new recipes! Full of chewy dried cherries, crunchy walnuts, and healthy oats. It’s sweetened naturally with applesauce and maple syrup. Enjoy these for breakfast or a snack.
Ingredients:
- 1 c. oats
- ¾ c. whole wheat flour
- 1/2 c. crispy rice cereal
- 1 tsp. cinnamon
- ¼ tsp. nutmeg
- ¼ tsp. salt
- ½ c. maple syrup
- ⅓ c. applesauce
- ¼ c. coconut oil (or other oil of your choice)
- 1 large egg (possibly some additional egg white)
- 1 tsp vanilla
- ¾ c. chopped dried cherries
- ½ c. chopped walnuts
Instructions:
- Preheat oven to 350 degrees.
- Combined the oats, flour, rice cereal, cinnamon, nutmeg, and salt in a bowl. Set aside.
- In a second bowl combine maple syrup, applesauce, oil, egg, and vanilla.
- Slowly add 1/2 of the bowl of dry ingredients to the wet ingredients, stir to combine.
- Add the cherries and walnuts to the mixture, stir to incorporate.
- Add the remaining dry ingredients and stir until all dry ingredients are combined. If the mixture is too dry add the extra egg white until mixture better pulls together.
- Pour into a shallow baking dish and press into an even layer.
- Place in the oven and bake for about 25 minutes.
- Remove from oven and allow to cool.
- Cut into bars and serve at room temperature or store in an airtight container.
