Chorizo Cheese Dip – This recipe uses items on sale the week of September 16 through 22, 2015. Delicious and perfect for entertaining, this spicy Chorizo Cheese Dip is sure to become a favorite with your friends.
Ingredients:
- 1/2 lb. First Hand Foods Chorizo – casings removed
- 1 large onion, chopped
- 1 tsp. Garlic, minced
- 1 tbsp. All purpose flour
- ½ c. beer of your choice
- ½ c. milk
- 2 cups mozzarella or other white melting cheese
Directions:
1) In a sauté pan, over medium heat, sauté chorizo. Use the back of your spatula to break it up as it cooks.
2) When mostly cooked, add onions and continue to sauté until softened and chorizo is cooked through.
3) Drain very well, reserve 1 tbsp. drippings in pan, and set chorizo mixture aside.
4) Add garlic and flour to the pan drippings and sauté 1 minute.
5) Slowly add beer to pan, stirring continuously.
6) Slowly add milk to the pan, stirring continuously. Continue to stir until thickened.
7) Add cheese to beer and milk mixture and stir until cheese is melted.
8) Pour chorizo into oven safe baking dish.
9) Pour Cheese over top of chorizo and place in oven under broiler. Broil until cheese is bubbly and beginning to brown. Serve immediately with tortilla chips, jalapenos and salsa.
