We now source maple syrup directly from a co-op of family farms centered in Wisconsin: Maple Valley Cooperative. The co-op pays competitive wages; promotes transparency, accountability, and sustainable practices in business; and supports the environment with practices such as their wind-powered office and bottling line. By buying directly, we’ve established another Co-op to Co-op relationship, resulting in a better deal for both parties.
The maple syrup is certified organic. Even though maple syrup comes from trees, not farmland, buying organic is important: no chemicals are sprayed in the forest (on trees or on weeds and roadways), a buffer is maintained between maple trees and non-organic fields, and no chemicals (such as defoamer or animal fat) are added during the syrup-making process. Forest health is also considered, for example, by not overtapping trees or logging the forest and damaging the ecosystem.
You may be confused by the labels on the syrup: Grade A Amber and Grade A Dark. What happened to Grade B?! The USDA established a new grading system this year, as part of an international standard. Thus we now have Grade A Amber Color, Rich Taste (a lighter, golden hue) and Grade A Dark Color, Robust Taste (formerly Grade B).
