Don’t worry that it doesn’t contain lots of spices or seasonings – this recipe needs nothing more! Don’t have Jasmine rice? You can substitute Basmati or brown rice. No currants? Use raisins instead and just let the rice sit a little longer at the end.
Ingredients:
- 2 tbsp. Olive oil
- ½ c. diced red pepper
- ¼ c. dried coconut
- 2 c. cooked Jasmine rice (rinse rice well before cooking per package instructions)
- ½ tsp kosher salt
- ¼ tsp. fresh black pepper
- ¼ c. currants
- ½ c. sliced green onion, green and white parts
Instructions:
- Heat sauté pan over medium high heat and add olive oil.
- When oil is hot, add red peppers to the pan and cook, stirring constantly, until tender crisp.
- Add coconut, rice, salt, and pepper to the pan, continuing to sauté, until some of the rice is beginning to brown.
- Add currants and green onion to the pan, stir gently and then place lid on pan and remove from heat. Allow rice to sit for three or four minutes to allow currents to plump. Toss rice, check to adjust seasoning, and serve.
