Local shrimp and local yogurt make for a terrific quick and delicious meal! Whip up this super fast marinade and sauce and let it rest in the fridge until dinnertime. When you are ready, quickly sauté the shrimp and serve with the tangy, sweet sauce. Add a green salad and crusty bread. Dinner is on the table! This recipe contains items on sale January 11-17, 2017.
Ingredients:
- 1 6 oz. container Carolina Farmhouse Dairy whole milk coconut yogurt, divided – Sale 2 for $3.00 – Save 21%
- ¼ c. olive oil (plus 1 Tbsp. more for sautéing)
- 2 limes, juiced and zested, divided
- 4 cloves garlic, minced
- ½ tsp. paprika
- ¼ tsp. salt
- 1 lb. WSM NC individually quick frozen shrimp, thawed, peeled, and deveined – Sale $10.99/1 lb. – Save $2.00
Directions:
1) In a plastic bag or bowl add ½ the container of yogurt, ¼ cup olive oil, ½ the lime juice, and ½ the lime zest, garlic, paprika, and salt. Mix well.
2) Add peeled, deveined shrimp to the bag or bowl and coat all shrimp well. Allow to sit in refrigerator for 30 minutes or up to 1 hour.
3) Meanwhile, make the dipping sauce. In a small bowl, combine remaining yogurt, lime juice, and lime zest. Stir to combine and set aside.
4) When shrimp have marinated, remove from marinade (discard any remaining marinade.)
5) Heat a sautépan over medium heat and add 1 Tbsp. olive oil to pan. Add shrimp to pan and sauté. Cook shrimp until opaque and just beginning to curl. Serve with dipping sauce. Serves 4.
