Ingredients:
- 2 c. brown rice, uncooked
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 tbsp. olive oil
- 2 carrots, diced small
- 4 green onions, sliced, white part and green part divided
- 1/2 red bell pepper, diced small
- 2 cloves garlic, finely minced
- 1 tbsp. fresh ginger, finely minced
- 1/2 tsp garlic powder
- 1/2 tsp. onion powder
- 1/4 tsp. cayenne
- 3 tbsp. tamari sauce
- 1 tbsp. honey
- 1 bunch Lacinato kale, stems removed and torn into small pieces
- 3 eggs, beaten
Instructions:
- Cook brown rice per package directions with salt and pepper and set aside.
- In a large skillet, over medium-high heat, add the oil.
- When the oil is shimmering, add the carrots and sauté for about 5 minutes.
- Add the white parts only of the green onions and the red bell pepper. Sauté about 3 minutes more.
- Add the minced garlic and ginger. Sauté about 1 minute more.
- In a small bowl, stir together the garlic powder, onion powder, cayenne, tamari, and honey.
- Add torn kale to the pan and stir until slightly wilted.
- Add cooked rice and tamari mixture to the pan and stir-fry until all rice and vegetables are well coated with tamari mixture and rice is beginning to brown.
- Check for seasoning. Add more salt or pepper if needed.
- Push the fried rice to the sides of the pan to create a well at the center of the pan. Pour the eggs into the well and cook gently until nearly set. Stir the rice back into the eggs and cook for one minute more.
- Serve while hot, topped with the reserved green parts of the onions.
