Ingredients:
- 1 box Lundberg Creamy Parmesan Risotto
- 1/2 of a white onion, minced
- 2 garlic cloves, minced
- 1/2 tsp. dried basil
- 12/ tsp. dried oregano
- 1/2 c. panko
- salt and pepper
- olive oil for frying
- 1/2 jar Field Day Organic Pasta Sauce
- 1/4 c. cream
- 2 tbsp. parmesan cheese
Instructions:
- Make risotto per package directions.
- Stir in minced onion, garlic, basil and oregano.
- Place risotto mixture in the refrigerator to chill.
- When the risotto mixture is chilled, remove from the refrigerator, split mixture into 8 portions and, using your hands, form them into patties.
- In a bowl combine panko, salt and pepper.
- Press risotto patties into panko until they are coated on all sides.
- Heat oil in frying pan, over medium-high heat, until shimmering. Add patties to the pan and cook until browned. Turn patties over and brown the other side.
- Remove patties from the pan and drain.
- Meanwhile, in a small pot combine pasta sauce, cream, and parmesan and heat through.
- Serve patties topped with sauce.
Serves four people two patties each.
