- 4 Hail Kissed peaches, cut in half and pit removed (do not peel)
- ¼ c. olive oil, divided
- 1 8 oz. ball of BelGioioso Fresh Mozzarella, sliced into 8 slices
- 2 tbsp. Honey (consider using hot honey!)
- 2 tbsp. Balsamic vinegar
- Freshly ground black pepper
- Chopped basil
INSTRUCTIONS:
- Heat the grill to at least 450 degrees F.
- Halve and pit the peaches, pat dry, and then brush them with olive oil. You can also brush the grill with a little olive oil.
- Place the peaches cut side down and grill until you begin to see grill marks. Flip the peaches and continue to grill until lightly charred and softened.
- Remove the peaches from the grill and let them cool slightly.
- While the peaches are still warm, top each with a thin slice of mozzarella.
- In a small bowl combine the balsamic and honey and then slowly drizzle the remaining olive oil into mixture while whisking continuously.
- Drizzle a little bit of the balsamic mixture over each peach.
- Top each peach with a sprinkle of black pepper and chopped basil. Serve right away.
