We did this tasty Oven “Fried” Chicken at our Recipe Makeover Demo in Carrboro last weekend and it was a hit! Heart healthy oats are toasted and used to provide a coating for the chicken. We also added lots of delicious spices to add tons of flavor. Made with a LOT less oil than typical fried or even oven-baked chicken recipes. Try this at home!
Ingredients:
- 2 c. rolled oats
- 3 Tbsp. olive oil
- 2 lbs. Freebird boneless skinless chicken breasts
- salt and pepper
- 1 heaping Tbsp. all-purpose flour
- 2 tsp. garlic powder
- 2 tsp. chili powder
- 1 tsp. thyme
- ½ c. milk
Directions:
1) Preheat oven to 375 degrees.
2) In a food processor combine oatmeal and olive oil. Pulse until oatmeal is chopped. Spread oatmeal on a baking sheet and place in oven until browned. Remove from oven and set aside to cool.
3) Meanwhile, use paper towels to dry each piece of chicken. Liberally salt and pepper each piece of chicken.
4) In a shallow bowl mix together flour, garlic, chili powder and thyme. Pour milk into a separate bowl.
5) Dredge chicken pieces in flour/spice mixture coating well. Shake to remove any excess. Dip chicken into milk. Set pieces aside.
6) Add toasted oatmeal to remaining flour/spice mixture. Mix together.
7) Dredge chicken in oatmeal mixture. Press coating onto chicken well to help it adhere.
8) Spray baking sheet with cooking spray, place chicken on sheet, spray chicken lightly with cooking spray.
9) Bake until browned, chicken is cooked through and juices run clear.
