Local hickory smoked hams are here!
At Weaver Street Market we are lucky to have a unique partnership with The Pig restaurant in Chapel Hill that allows us greater access to local pasture-raised pork and an array of delicious charcuterie. Sam Suchoff, the owner of The Pig, sources pasture-raised hogs from the NC Natural Hog Growers Association (NCNHGA) in Eastern North Carolina. Sam utilizes whole hogs in his production of smoked hams, BBQ, bacon, hog dogs, bologna, and Lady Edison extra fancy country ham, all of which are available for sale at Weaver Street Market. The extra pork loins not made into value-added products are sold in our stores’ meat cases as pork chops, tenderloins, and pork loin roasts.
The ability to purchase whole animals from farmers creates a better and more valuable relationship, as the farmer does not have to market the animal in pieces. Without Sam and The Pig, Weaver Street would not be able to manage such a relationship. This is just one part of the challenging process of sourcing high quality local meat products! The Pig’s hickory smoked petite hams are now available in our stores, while supplies last! These delicious hams are seasoned with garlic, rosemary, and juniper, then smoked in-house and cured for two to three weeks. The petite hams are on sale for 8.99/lb through Easter (April 1).
