An easy, sweet summer appetizer.
Ingredients:
- 2 packages of local mixed cherry tomatoes
- 2 Tbsp. honey
- 2 Tbsp. olive oil
- salt & pepper to taste
Directions:
1) Preheat oven to 375 degrees.
2) Cut each tomato in half and squeeze to expell seeds and juice.
3) Place tomatoes on baking sheet and drizzle with honey and oil. Sprinkle with salt and pepper.
4) Toss tomatoes to coat and place pan in oven. Bake for 30 minutes or until all juices have evaporated. Serve warm.
