This recipe comes to us from Liz Matthews, our Food House Kitchen Manager.
Ingredients:
- 3 c. onions, cut into strips
- small amount of olive oil
- salt and pepper
- pinch cayenne
- 2 tbsp. minced shallots
- 1 tbsp. chopped garlic or more if you prefer
- 2 smoked turkey drumsticks
- 1 12oz. bottle beer (we suggest local!)
- 1/4 c. cider vinegar
- 6 lbs. greens (your choice mustard, collard, turnip, kale, spinach)
Instructions:
- In a large pot, heat olive oil over medium-high heat and when hot, sauté the onions until they are wilted.
- Season with salt and pepper.
- Add shallots and garlic and cook for two minutes more.
- Add the turkey drumsticks to the pot.
- Add greens, 1/3 at a time, pressing down to make more room as the green begin to wilt.
- Pour in beer and vinegar.
- Reduce heat to low, cover pot, and cook for 45 minutes or until your desired level of tenderness.
- Serve.
