Smoked salmon and mango play nicely together! Toss together this quick and delicious salad and enjoy the sweet mango, crunchy cucumber, and tender salmon in a wonderfully tangy dressing.
Ingredients:
- 2 ataulfo mangoes, pitted and cut into ½ inch dice
- 1 cucumber, peeled, seeded, and cut into ½ inch dice
- 2 Tbsp. red onion, minced
- 2 Tbsp. soy sauce
- 2 Tbsp. honey
- 2 Tbsp. olive oil
- Juice of one lime
- 1 tsp. dijon mustard
- 1 package smoked sockeye salmon, cut into strips
- Salt and pepper as desired
1) Place cut mangoes, cucumber, and red onion in a medium bowl. Toss to combine.
2) In a small bowl combine soy sauce, honey, oil, juice, and mustard. Whisk to combine.
3) Add salmon to soy sauce mixture and toss to coat.
4) Pour salmon and sauce mixture over mango mixture in medium bowl. Toss to combine.
5) Check for seasoning and add salt or pepper as desired. Serve.
