This decadent pie uses seasonal berries and is a perfect fit for you Valentine’s Day. Serves 8.
Ingredients:
- 1 WSM pie crust
- 2 8-oz. bars Neufchatel cheese, softened
- ½ c. powdered sugar
- 1 tsp. vanilla extract
- 3 Tbsp. milk
- 1 c. blackberries
- 1 c. strawberries, quartered
- 1 c. mangos, diced
- ½ c. strawberry or grape jelly
Directions:
- Preheat oven to 400 degrees. Puncture bottom and sides of crust and place in oven until crisped and evenly browned, about 7 to 10 minutes. Allow to cool.
- Meanwhile, in a bowl, beat together Neufchatel, powdered sugar, vanilla, and milk until smooth and creamy.
- Spread Neufchatel mixture into the bottom of the cooled pie crust.
- In another bowl mix together blackberries, strawberries, and mango.
- Melt jelly and pour over fruit. Toss to coat and create a glaze on fruit.
- Spoon fruit over Neufchatel mixture to finish filling pie crust.
- Refrigerate and serve chilled and topped with whipped cream.
