Ingredients:
- 4 C Fresh Corn cut(frozen corn can be subbed)
- 1 C Red Pepper Dice
- 1 C Green Pepper Dice
- 1 ½ t. Chile powder
- ¾ t cumin ground
- ½ t. fine sea salt
- 1 T Chipotle in adobo sauce minced (add more if you like it spicy)
- ¼ C olive oil
Instructions:
1. Preheat oven to 425.
2. Mix all ingredients in a bowl & spread evenly on a sheet pan lined with aluminum foil
(Tip: Spray pan with oil to prevent foil from sticking.)
3. Oven roast 15-20min or until golden and roasted
Sauce:
Ingredients:
- 2 garlic cloves minced
- 1 t. Chile powder
- 3 T lime juice
- ¼ C Chopped Cilantro
- ½ C Scallions(cut into thin rounds)
- ¼ C feta crumbles
- ½ C Sour Cream
- ½ C Mayonnaise(or Veganaise)
- Salt & pepper to taste
Instructions:
1. Combine & whisk all ingredients in a bowl then pour over roasted corn.
