Our produce buyer, Carolyn, adapted this recipe to use when NC apples are in season. It’s a delicious and healthy way to eat more apples.
Ingredients:
- 4 pounds apples (try a mixture of different varieties!)
- 3/4 c. water
- 2 tsp. lemon juice
- 1 Tbsp. butter
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground allspice
- 1/8 tsp. sea salt
Directions:
1) Peel, core, and slice the apples. Place all of the ingredients into a heavy medium saucepan or enameled Dutch oven.
2) Cook over medium heat, stirring often to make sure apples don’t stick or burn. Simmer for 30 minutes or until apples are tender. Puree to desired texture using an electric immersion blender or a good ol’ fashioned potato masher.
3) Serve warm with yogurt, heavy cream, or coconut milk drizzled on top, or refrigerate and enjoy chilled. Also delicious with oatmeal or pancakes.
4) The applesauce will keep in the refrigerator for about 10 days, or you can freeze it for up to 6 months, then allow it to thaw overnight in the refrigerator. This recipe is not intended for canning.
