Here is a tasty new seasonal spin on pasta! Quick and easy canned organic pumpkin, just the right herbs and salty Parmesan come together to make a delicious pasta sauce. Make this with gluten free pasta if you wish! This recipe includes items on sale October 28 through November 3, 2015.
Ingredients:
- 1 lb. cooked pasta, cooked in salted water, reserve 1 cup of cooking water
- ¼ c. olive oil
- 1 15 oz. can Farmer’s Market Organic Pumpkin – Sale $1.69/ea. Save $1.20
- 2 tsp. fresh sage OR 1 tsp dried sage
- 1 tsp. fresh thyme OR ½ tsp. dried Thyme
- ¼ tsp. nutmeg
- 1 tsp. red wine vinegar
- ½ c. half and half, warmed
- ½ c. Parmesan
- Salt and Pepper as needed
Directions:
1) In a sauté pan heat olive oil over medium heat.
2) When oil is hot, carefully add pumpkin. It will spatter.
3) Add sage, thyme, nutmeg and red wine vinegar. Stir and cook over medium heat until warmed through.
4) Slowly stir in half and half.
5) Add cooked pasta to pan and toss to coat. If sauce is too thick, add a small amount of reserved pasta water until sauce is the correct consistency.
6) Add Parmesan to pan and toss to combine. Check for seasonings and serve warm.
