In the summer of 2015, our Specialty Merchandiser, Peg Todloski, went on a New England tour, visiting several of our northern producers before attending the American Cheese Society’s annual conference in Providence, Rhode Island. While visiting Grafton Village’s cheesery, she donned a hairnet and coat and went to work! Some of her pictures are below.
Vermont dairy farmers founded the Grafton Cooperative Cheese Company in 1892, to make surplus milk into cheese in the town of Grafton. In 1912, a fire destroyed the co-op’s factory. The nonprofit Windham Foundation, which promotes rural communities in Vermont, restored the company in the mid-1960s. As part of the Windham Foundation, Grafton Village supports the foundation’s mission through the proceeds of its cheese sales. The company’s cheesemaking traditions have endured: they make our cheese by hand using raw milk from small family farms. Quality and taste are the hallmarks of their award-winning cheeses.
