The founders of PORCH made this recipe for our Co-op Fair in September. It’s one of the recipes from the PORCH Cooks cookbook, which they created for their families using grant money from our CCF grant. Kids can help with the recipe by adding and stirring the pasta, by mixing the stressing, and by stirring everything together in a large bowl.
Ingredients:
- 12 oz bow tie pasta
- 1 c. small tomatoes
- 1 medium yellow squash
- 1 medium zucchini
- 1 medium broccoli crown
- 1 medium bell pepper
- 1/3 medium red onion
- 1/4 c. chopped parsley (optional)
For dressing (or, use your favorite Italian dressing from the store):
- 1/2 c. vegetable oil
- 1/3 c. red wine vinegar
- 1/2 to 1 Tbsp. dijon mustard
- dried oregano to taste
- 1 tsp. minced garlic
- salt and pepper
Directions:
1) Add the pasta to boiling water and cook until tender. Drain in a colander and set aside.
2) Chop the squash, zucchini, and broccoli into bite-size pieces and saute briefly in a teaspoon of vegetable oil. chop the tomatoes, onion, and pepper into bite-size pieces.
3) If making the dressing, whisk together all ingredients in a small bowl.
4) Combine the cooked pasta, chopped vegetables, and dressing together in a large bowl until everything is well mixed.
5) Serve warm or refrigerate until ready to eat. Enjoy!
