A delicious savory relish made with preserved lemons. Preserved lemons (unjuiced lemons preserved in a salt brine) add a unique flavor. Rather than being sour, they are mildly tart and abundantly lemony with a salty tang. We sell preserved lemons in the Specialty Department (in the refrigerated case with the olives and things). Ingredients:
- 1/2 of a preserved lemon
- 3 Tbsp. olive oil
- 1/2 c. chopped scallions – green part only, finely chopped
- 1 clove minced garlic
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. sweet paprika
- Black pepper to taste
Directions:
1) Wash preserved lemon – squeezing it to get rid of most of any excess liquid. Blot it dry.
2) Finely chop the lemon and place in a bowl with olive oil, scallions, garlic, lemon juice and paprika.
3) Stir to combine. Season with black pepper to taste.
4) Serve immediately or store in refrigerator for up to 3 days.
Use sparingly to top meats or cheeses.
