Our bakers have been working on a pretzel recipe for the past few months. We’re proud to announce: the pretzels are here!
You’ll find two varieties of pretzel in our stores: plain with salt, and “everything” with sesame seeds, poppy seeds, dried onion, caraway seeds, and salt. Both varieties are the Swabian (svay-bee-in) style, from the Swabia region in Germany. Swabian pretzels must have at least five percent butter in the recipe. Their shape has a fat belly and skinny arms, with one score on the belly. (This differs from Bavarian styles, which are the same width all around, unscored, and usually made with less fat.)
What also makes our pretzels special is that 60 percent of the flour is Super Sprout™ sprouted whole wheat flour from Lindley Mills in Graham. Sprouted wheat flour has higher digestibility and fiber that is more soluble than ordinary flour, and nutrients that are more readily available. It has a sweeter, wheat-ier taste.
We plan to introduce more shapes, like sticks, rolls, buns, and bites. For now, give the pretzels a try. Our demo team will be sampling them in stores this Friday, June 22, 4 to 7 PM.
