Ingredients:
- ½ c. maple syrup
- 2 Tbsp. Dijon mustard
- 2 tsp. soy sauce
- 1 lb. salmon fillet
- ¼ tsp. salt & pepper
- 1 Tbsp. olive oil
- ¼ of a fresh pineapple, sliced
Directions:
In a small pot, combine the maple syrup, Dijon mustard and soy sauce. Cook over medium heat until reduced and thickened. Set aside.
Meanwhile, season salmon with salt and pepper. In a sauté pan, heat the olive oil over medium high heat. When pan is hot, place salmon skin side down and cook for 2 minutes. Carefully flip the salmon and cook for 2 minutes more.
Reduce heat to medium and place slices of pineapple around salmon. Pour maple sauce over salmon and pineapple and continue to cook until salmon is tender and flakes easily.
Serve over rice.
