- 1 pound of Cod
- 2 1/2 cups all-purpose flour
- 1 1/2 cup cold water
- 1 tsp black pepper
- 1 tsp all-purpose seasoning
- 1 tsp garlic powder
- 1 Onion
- 1 Tomato
- 1 bunch of Scallions
- 1 Bell pepper 1 Hot pepper
- 1 and ½ cups of water Vegetable Oil (for frying)
Prep work:
Soak cod in water for 24 hours to remove the salt.
Instructions:
1). Boil the cod for 15 minutes then take the cod out of the pan and dump out the water. Refill pan with fresh cold water and place the cod back in and boil for 15 more minutes.
2). Place cod in a bowl and pinch and pick it apart until the pieces are not too chunky.
3). Chop and dice onion, tomato, bell pepper, scallion, and hot pepper and place in a separate bowl.
4). Pour 1 and ½ cups of water into the bowl with your chopped vegetables. Then add 2 and ½ cups of flour, black pepper, garlic powder, and seasoning salt into the same bowl. Mix well with a mixing spoon. (Tip: If your batter is watery add a little more flour).
5). In a new saucepan pour enough oil to coat the bottom of the pan completely. Heat the pan to medium heat for frying. Then drop rounded spoonfuls of the mixed cod batter to fry. Fry 5 minutes per side until golden (10 minutes total).
(Tip: If you have a wooden spoon stick it into the oil and if you see bubbles it is hot enough for frying.)
6). Cover a plate with paper towels and place Saltfish Fritters on the plate. Eat and enjoy!
