As we’ve begun delivering fresh produce to the food pantries, funded by last December’s Round Up! campaign, we’ve also been sharing recipes that clients can use with that week’s groceries. Some recipes we’ve sent came from our staff: our produce merchandiser, Carolyn, shared this recipe for “Bubble and Squeak.” Our Food House kitchen manager, Liz, shared her collard recipe. And our demo coordinator, Lisa, contributed recipes for Irish Colcannon, Greens and Beans with Crispy Bacon, Spicy Sweet Potato and Kale Saute, and Saucy Lentils & Kale (PDF here).
We need more! If you have a recipe to share, please send it to us at web@weaverstreetmarket.coop. The recipe should use basic ingredients and simple techniques, and should feature some of the items we’ll be sending to the pantries:

Valeria Hernandez, IFC’s pantry manager, shared with us, “Volunteers have been excited to see produce that is really fresh. Volunteers like that we can actually give out bigger quantities of produce. Clients too have been enjoying the variety they have to choose from. It’s been great to see people take home bags of produce.”
And Kay Stegner, OCIM’s pantry manager, told us, “The things people were most excited about were cabbage and collards. They were so fresh and beautiful!”
