The tomatillo, a.k.a. the Mexican husk tomato, looks like a small green tomato. Like tomatoes, it is a nightshade, but it’s flavor is tart. Most people associate tomatillos with salsa verde. Emily Buehler, our Website Coordinator, shares this easy way to cook tomatillos if you’d like to try them outside salsa. Now is the perfect time of year, because North Carolina tomatillos are appearing. We’ve got some from Brackenbrae Farm in our Hillsborough store.
Ingredients, for one person:
- 6-8 tomatillos, cleaned and diced
- an equal volume of onion, diced
- olive oil
- salt and pepper
Directions:
Heat the oil in a pot or pan and add the onions. After a brief head start, add the tomatillos with salt and pepper. Cook, stirring occasionally, until the onions start to brown slightly. Enjoy as a side dish with dinner or breakfast!
