Bagels: they’re not just for breakfast. Our house-made bagels are on sale to celebrate their new, softer recipe. Lisa, our Demo Coordinator, came up with this recipe for a simple bagel sandwich that uses sale items from the week October 7 through 13, 2015, including local bacon from The Pig and organic, fair trade avocados from Equal Exchange.
Ingredients:
- 2 Weaver Street Market bagels – Your choice of flavor – $0.99/ea. Save .20/ea.
- 2 Tbsp. Nefeli olive oil – Weekend Deal – $6.99/25.4 oz. Save $3.00
- 2 avocados – 3 for $5.00 Save 33% – pit removed and flesh scooped from peel
- 1 ½ Tbsp. lemon juice
- 2 tbsp. minced onion
- 2 tsp. minced garlic
- salt and pepper – to taste
- 12 oz. The Pig local bacon – $5.99/12 oz. Save $1.50 – cooked crisp and crumbled
- ½ lb. Red Wax gouda – $7.49/lb. Save $1.50/lb. – shredded
Directions:
1) Slice bagels in half and brush cut side with olive oil.
2) Place bagels cut side up under broiler and cook until top is nicely browned. Remove from oven
and set aside.
3) Meanwhile, place avocado, lemon juice, onion and garlic in a bowl and, using a fork, mash and
combine well. Season to taste with salt and pepper.
4) Spread each bagel halves with ¼ of the avocado mixture, sprinkle with crumbled bacon and top
with grated Gouda.
5) Return to oven and broil until cheese is melted and bubbly. Serve immediately. Serves two.
