Ingredients:
- 3 tsp. olive oil
- 1/2 red onion, diced
- 1 tsp. garlic, minced
- 1 lb. Freebird organic boneless chicken thighs, cut into 2 inch cubes
- ½ c. Old Mule BBQ sauce, divided
- ½ c. pineapple, with juice, chopped
- 1 Rustic Crust organic pizza crust
- ¾ c. shredded Gruyere De Comte cheese
- ¾ c. shredded mozzarella (or smoked mozzerella)
- ¼ c. cilantro, chopped
Directions:
1) Preheat oven to 400 degrees.
2) Heat 2 tsp. olive oil in a saute pan over medium heat.
3) Add onion to the pan and saute until onion starts to become translucent.
4) Add garlic and chicken to the pan and saute until chicken is cooked through.
5) Add two tablespoons BBQ Sauce and pineapple with juice to chicken and continue to cook until juices have reduce and have coated the chicken. Set aside.
6) Rub what will be the bottom of the crust with remaining olive oil.
7) Spread top of crust with remaining BBQ sauce and sprinkle with Gruyere.
8) Top cheese with chicken mixture and then sprinkle with mozzarella.
9) Bake pizza directly on oven rack until bubbly and browned.
10) Sprinkle with cilantro and serve while hot. Serves 6 to 8.
