Here is a great recipe for Game Day: easy and delicious Pepper Poppers made right in your oven! These are made with mini sweet peppers—so even those who don’t like heat can enjoy.
- mini peppers
- 1 container Weaver Street Market pimento cheese
- 1/2 c. all-purpose flour
- 1/4 tsp. each salt and pepper
- 1 egg, beaten
- 1 c. cracker crumbs or panko
Directions:
1) Set oven to broil (medium if you have a choice).
2) Make a slit in each pepper are remove as many seeds as possible.
3) Stuff each pepper with pimento cheese – don’t overfill.
4) Place flour, beaten egg and crumbs in three separate bowls.
5) Coat each stuffed pepper in a thin layer of flour.
6) Dip coated pepper in egg.
7) Dip pepper in crumbs and press to help crumbs adhere.
8) Place peppers on an oiled or parchment paper lined baking sheet and place in oven under broil.
9) Watch peppers carefully and turn as needed to ensure that all sides are evenly browned.
