It’s getting warm–time to break out the ice-pop molds! Here is a sweet and unique pop that adults will like just as much as the kids will. Make a batch for the weekend!
Ingredients:
- 1 c. golden pineapple, pureed
- 2 c. Nature’s Factor organic young coconut water
- 1/2 c. coconut milk
- 1 lime, zested and juiced
Preparation:
1) Fill ice-pop mold with equal amounts pineapple puree.
2) In a pouring container, mix together all remaining ingredients, coconut water, coconut milk, lime zest, and juice. Fill mold the rest of the way with mixture.
3) Freeze for 1 1/2 to 2 hours (or until ice-pops are slushy) and then stir mixture in each mold (use something long and slender, like the handle of a wooden spoon) to distribute pineapple throughout icepop.
4) Continue to freeze until ice-pops are firm–at least 4 hours. Un-mold and serve. Makes 4 large or 6 to 8 small.
