We did a version of this fruity salad with a savory but sweet drizzle of balsamic in the stores in spring 2015, and it was a big hit!
Ingredients:
- 1 container fresh mozzarella (ovalini or ciliengini)
- 1 container organic, local strawberries
- 3 ataulfo mangos
- 1 cup balsamic vinegar
- 1 Tbsp. brown sugar
Instructions:
1) Cut each mozzarella ball into bite sized pieces. Set aside.
2) Cut each strawberry in quarters. Set aside.
3) Peel, de-seed, and cut mango into ½ inch cubes. Set aside.
4) In a heavy bottom pot over medium low heat, combine balsamic vinegar and sugar. Allow to slowly simmer until reduced by half and syrupy. Be careful not to cook too long as it will burn easily and quickly. Allow to cool.
5) Toss mozzarella, strawberries, and mangos in a medium-sized bowl. Drizzle cooled balsamic glaze over the mixture and toss to coat. Refrigerate or serve at room temperature.
