Through our Special Delivery program, we bring in small-batch, artisan cheeses a couple of times a month. We bring in a limited amount of these amazing cheeses and sell them at a crazy-good price. This week’s Special Delivery Cheese is the incredibly flavorful Güntensberg, an Appenzeller-style Swiss cheese, whose flavors will not disappoint.
From Northeast Switzerland comes this wonderful Alpine cheese. Güntensberg is the namesake of the family behind the dairies of Bütschwil and Bodmen in historic Toggenburg. Third generation Reto Güntensperger makes this variation on Appenzeller using his own house-made cultures and raw, whole milk. He uses milk only from the higher altitude farms, which number around 50 farmers with less than 30 cows each.
This delicious Swiss-made, Alpine cheese has deep savory flavors. Brothy aromas lead into a creamy paste and notes of buttered popcorn, cream, and egg yolk. For an amazing experience, add this cheese to a grilled cheese on a hearty country bread and serve with a side of pickles.
