This year, we’ve started bringing in small-batch, artisan cheeses a couple of times a month. We’re calling it our Special Delivery program: we bring in a limited amount of these amazing cheeses and sell them at a crazy-good price. When they’re gone, they’re gone, but not to worry, there’ll be something else on the way. Be sure to stop by our cheese counters to find out what Special Delivery we’ve received lately.
This week we unpacked 42 gorgeous bricks of a luscious goat’s milk cheese from Capriole Farm. Capriole is located in the lush, rolling hills of Indiana, just over the Ohio River from Louisville, KY. Founded in 1988, Capriole Farm is one of the oldest and most award-winning goat dairies in the United States, having won numerous prizes for their cheeses at the American Cheese Society judging.
This week’s Special Delivery cheese is Capriole’s Sofia, a brick-shaped goat’s milk cheese with vegetable ash marbling, lightly aged under a geotrichum rind. It is hand-ladled, with a fine, fluffy texture and flavors that are milky and slightly sweet. A pure delight!!
Our Demo Team will be sampling Sofia in stores this Friday, November 20, from 4 to 7.
