Maple Syrup Dipping Sauce
Ingredients:
- 2 c. maple syrup
- 1 cinnamon stick
- 1 vanilla bean, split and scraped into pot
Instructions:
- Bring to a boil and then reduce to a simmer.
- Simmer for five minutes.
- Remove from heat and allow to cool.
Fritters
Ingredients:
- 2 1/2 c. all-purpose flour
- 1/2 c. granulated sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. allspice
- 1/2 tsp. ground mace
- 1/2 tsp. salt
- 2 c. vanilla yogurt (you can also use non-dairy yogurt as well)
- 2 eggs (or egg substitute)
- 4 tsp. brandy (optional)
- Oil for frying
- Powdered sugar for sprinkling
Instructions:
- In a large bowl combine flour, sugar, baking soda, baking powder, allspice, mace, and salt.
- In a small bowl combine yogurt, eggs, and brandy. Pour into dry mixture and stir to combine. Set aside to rest while you prepare the oil.
- Add about 1 inch of oil to a heavy bottom pot, or deep saute pan, or a hot oil frier and bring the oil to between 350 and 360 degrees.
- Carefully add heaping tabespoons of the batter to the hot oil. Allow to cook for about five minutes, encourage flipping each fritter once halfway through cooking (they should flip themselves!) Remove with a slotted spoon and place on paper toweling to drain. Add more oil as needed and bring oil back up to temperature between batches.
- Sprinkle with powdered sugar and serve with the maple syrup dipping sauce.
