Ingredients:
- 2 8 oz. packages Seal the Seasons Butternut Squash – Sale $2.79/ea. – Save $1.20
- 2 tsp. olive oil
- 1/2 tsp. Simply Organic Cumin – Sale $4.49/ea. – Save $1.50
- 1/2 tsp. Simply Organic Coriander – Sale $4.49/ea. – Save $1.00
- dash Simply Organic Cinnamon – Sale $4.49/ea. – Save $1.50
- 2 tbsp. butter
- 1 Organic Navel Orange, zested and juiced – Sale $1.50/ea. – Save $.50
- 1 small sprig of fresh rosemary (optional)
- 1 tbsp. honey
- kosher salt and freshly ground pepper, to taste
Instructions:
- Preheat oven to 400 degrees.
- Spread butternut squash on a baking sheet and drizzle with olive oil.
- Bake until beginning to brown and fork tender, turning once or twice while cooking.
- Meanwhile, in a small pot over medium heat, add cumin, coriander, and cinnamon and stir until fragrant to bloom the spices. Add butter, orange juice, 1/2 teaspoon of the zest, sprig of rosemary (if desired) and honey. Stir until butter is melted and bubbly.
- Pour melted butter over squash and toss. Sprinkle with salt and pepper.
- Turn on broiler, place squash back in oven and broil until browned all over, tossing once or twice while browning.
- Check seasoning and adjust as needed. Serve while hot.
