- 0.18 lb. butter
- 0.56 lb. yellow onion, diced
- 0.22 lb. shallots, diced small
- 0.04 lb. garlic, minced
- 0.05 lb. ginger, minced
- 0.09 lb. brown sugar
- 1.13 oz. sea salt
- 0.26 oz. thyme
- 0.07 oz. cinnamon
- 0.07 oz. white pepper
- 0.07 oz. dried orange peel
- 0.04 oz. black pepper
- 0.04 oz. nutmeg
- 4.83 lb. water
- 2.20 lb. canned pumpkin
- 0.37 lb. apple juice
- 0.07 lb. orange juice (frozen concentrate)
- 0.05 lb. apple cider vinegar
- 0.78 lb. heavy cream
Directions:
1) Cook onions and shallots in butter on low heat until soft.
2) Add ginger, garlic, and all spices and cook 1 minute.
3) Add pumpkin and liquids. Simmer on low for 10 minutes.
4) Add cream and blend until smooth (we use an immersion blender).
