Ingredients:
- 1.89 lb. collard greens, sliced
- 1 lb. salt
- 0.50 lb. yellow onion, diced
- 0.19 lb. olive oil
- 0.19 lb. canola oil
- 0.07 lb. garlic, minced
- 0.09 oz. smoked paprika
- 0.03 oz. crushed red chili pepper
- 0.41 oz. sea salt
- 0.01 oz. black pepper
- 0.88 lb. water
- 0.09 lb. apple cider vinegar
Directions:
1) Fill a kettle with water. Add 1 lb. salt and bring to a boil ADD 1# salt. Boil.
2) Add collards and mix well. Cook until soft. Drain well.
3) Cook onions in both oils until caramelized.
4) Add garlic and spices and cook for 3 minutes.
5) Add greens, water, and vinegar; simmer 5 minutes.
