We have terrific, fresh seafood every week from Locals Seafood! Here is one great way to make the most of it. Tender, well spiced fish, creamy yogurt and avocados, and just the right amount of lime.
Ingredients:
- 1 Equal Exchange avocado, mashed
- ¼ c. plain Carolina Farmhouse yogurt
- 1 tbsp. lime juice
- 1 tsp. minced garlic
- 1 tsp. salt – divided
- 1 tsp. black pepper – divided
- 2 fillets Locals Seafood mahi mahi or other fish of your choice
- 1 tsp. chili powder
- 1 tsp. paprika
- 2 tbsp. San Lucus avocado oil
- 6 corn tortillas
- chopped cilantro leaves
- minced red onion
- diced organic ataulfo mangos
- lime wedges
Directions:
1) In a small bowl combine mashed avocado, yogurt, lime juice, garlic, ½ tsp. salt, and ½ tsp. black pepper. This can be made early and refrigerated overnight for the best flavor or for at least 30 minutes.
2) Heat sauté pan over medium heat.
3) Dry fish fillets and sprinkle with remaining salt and pepper, chili powder, and paprika. Pat or rub to coat fish well with seasonings.
4) Add avocado oil to pan; when hot, add fish to the pan and sear fish on both sides and allow to cook, turning as needed, until cooked through and fish easily flakes. Set fish aside.
5) Wipe out sauté pan and then warm each tortilla in the pan until tortillas are pliable.
6) Top each tortilla with some of the avocado-yogurt sauce, 1/3 of a fillet of fish, and a sprinkle of cilantro, red onion, and mango. Serve lime wedges on the side to be squeezed on taco prior to eating. Serve immediately. Makes 6 tacos.
