It’s the holiday season—but we can still bake with healthy ingredients. These high protein muffins are made with less flour, fat, and sugar than you typically find in holiday baking—and they have the addition of whey protein, almond flour, yogurt, and fresh apples. These muffins may be lighter, but they are heavy on flavor and holiday fresh-baked goodness! This recipe includes items on sale November 30–December 6, 2016.
Muffin Ingredients:
- ¼ c. butter, at room temperature
- ¼ c. unsweetened apple sauce
- ¼ c. sugar
- ¼ c. maple syrup
- 1 egg
- 1 c. plain yogurt
- 3/4 c. all-purpose flour
- 1 c. almond flour

- 1 heaping tsp. baking powder
- ¼ tsp.salt
- 2 tsp. ground cinnamon
- ¼ tsp. nutmeg
- dash cloves
- 2 c. peeled, cored, and ½-inch cubed organic fuji apples – Sale $1.99/lb. – Save $1.00
Topping Ingredients:
- ½ c. dark brown sugar
- ¼ c. oats
1) Preheat oven to 375 degrees. Grease 12-cup muffin pan or line with paper liners.
2) In a medium bowl, combine butter, apple sauce, sugar, and maple syrup. Beat until fluffy.
3) Add egg and yogurt and stir to combine. Set aside.
4) In a separate bowl, combine all-purpose flour, almond flour, whey protein, baking powder, salt, cinnamon, nutmeg, and cloves. Stir to combine.
5) Slowly add flour mixture to the butter mixture. Add just a little at a time while beating in between additions.
6) When all flour mixture is added and batter is smooth (it should be thick), stir in apples.
7) Scoop batter into muffin pans until each cup is ¾ full.
8) In a small bowl combine topping ingredients and sprinkle evenly over tops of all unbaked muffins.
9) Bake 25 minutes. Makes 12 muffins.
