This week’s Special Delivery cheese is the delicious, raw milk Bayley Hazen Blue from Jasper Hill Farms in northern Vermont. This flavorful blue is fudgy in texture, with a paste that is dense and creamy with well-distributed blue veining. This blue is more mellow than some blues, with grassy, nutty flavors. Try pairing this original-recipe blue cheese with a fruity red wine, a toasty imperial stout, or a hunk of dark chocolate. Bayley Hazen Blue is also ideal for crumbling over a juicy burger or a hearty spinach salad.
Jasper Hills has become famous for both their farmstead cheeses, and their cheese-aging facilities called the cellars at Jasper Hills.
