Last spring we paid a visit to Boxcarr Handmade Cheese in Cedar Grove. Cheese-makers Samantha Genke and Alessandra Trompeo are creating mixed-milk cheeses using local cow’s and goat’s milks. They were inspired by a visit to Italy—Alessandra’s birthplace—and the small country farmsteads they saw.
We’ve added two new Boxcarr cheeses to our lineup. All Boxcarr cheeses are 25% off this week and next for co-op owners.
Made with cow’s milk, this is a best-of-both-worlds Robiola. A clean, dry rind protects a slightly firm, yet silky interior that is both luscious and zingy.
A delicate, snowy rind yields to a center with sweet, nutty flavors in this mixed-milk masterpiece.
Lissome is an aged, washed-rind cheese reminiscent of Taleggio. We add an Italian ale named Clan!Destino to the recipe and wash the cheese with the beer as well.
Made from the same recipe as Lissome, the young cheese is instead cold-smoked to preserve its youthful flavor while imparting a smooth but noticeable smokiness and depth.
