In celebration of Hispanic Heritage Month, the co-op is proud to offer a delicious Mexican corn dish on the hot bar. Our Hispanic staff helped guide the creation of this Mexican street corn-inspired dish, and their expertise truly shines through in the final product.
This recipe is a spin-off from the original corn on the cob recipe uses corn, which is roasted with green and red peppers, and then seasoned with a blend of spices and chipotle pepper puree.
